You probably already know about my healthy pancake obsession. I'm always trying out new recipes on the weekend, looking for the perfect consistency and flavour. These banana coconut pancakes are adapted from a recipe by Sakara Life and even got my husband's seal of approval!
Banana Coconut Pancakes
1/4 cup ground flax seed
1/2 cup buckwheat flour
1/2 cup spelt flour
2 ripe bananas
1/2 cup water
1/2 cup almond milk
1 tsp cinnamon
1 tbsp maple syrup (plus extra for serving)
1/2 tsp vanilla powder
3 tbsp dessicated coconut (plus extra for topping)
cacao nibs, chopped almonds, bee pollen, blueberries
Method: Add all ingredients into a bowl and use a hand mixer (or mixing bowl if you prefer) to combine. Pour 1/4 cup mixture into a lightly greased pan and allow to start bubbling on top before flipping. Cook approx 2 minutes on the other side or until the pancake is nice and golden.
Serve immediately with maple syrup, extra coconut and desired extra toppings.
